459: Honey Cake

Honey & Cherry Cake
Ingredients
Try different flavoured honeys:

  • 175g (6oz) butter
  • 80g (3oz) caster sugar
  • 80g (3oz) set honey
  • 2 eggs
  • Sieve together: 115 g (4 oz) plain
  • and 115g (4 oz) wholemeal flour
  • and 2 teaspoons baking powder
  • 50 g (2 oz) ground almonds
  • 115 g (4 oz) glaze cherries, quartered
  • 2-3 teaspoons milk
  1. Cream the butter, sugar and the honey together until light in colour and fluffy. However, be careful not to overbeat.
  2. Beat in the eggs, then fold in the flours, baking powder, ground almonds and the cherries.
  3. Stir in enough milk to give a soft mixture.
  4. Spoon the mixture into the greased and lined 900g (2lb) loaf tin.
  5. Bake at Gas Mark 3 electric oven 140oC for 60-75 minutes until the cake is well risen, firm to touch, and dark golden in colour.
  6. Leave the cake in the tin for ten minutes before placing it on a wire rack to cool completely.

All Vegetables, Flowers, Plants, Floral Art, Home Baking and Jam can be displayed in the Marquee either Monday 27th July from 4-8pm or Tuesday 28th July up to 11am

All Country Crafts, Home Industries, Photography, Paintings and School children’s classes MUST be displayed on Monday 27th July from 4-8 p.m

All Entry Fees £2.00 unless otherwise stated.
Prizes: 1st £10; 2nd £6; 3rd £4 (unless otherwise stated)

 

Exhibitor must enter only one pot of Jam per class
